4 boneless skinless chicken breast halves (1 lb)
1/4 cup honey
2 tablespoons lemon juice
2 tablespoons light soy sauce
1 teaspoon Dijon mustard
Prep time: 10 minutes
Cook time: 30-40 minutes
Place chicken in an ungreased 11" x 7" baking pan. Combine remaining ingredients and pour over chicken. Bake uncovered at 350 degrees for 35-40 minutes, turning every 15 minutes and basting with the pan juices.
I made three lbs of chicken so I tripled the sauce, I also put about 8 tsp of Dijon in. I also put some green onions on top as a garnish before serving.
I do think this could potentially be used as a beef marinade as well, possibly for grilling? If anyone wants to try it out, please let me know!
Side suggestion: rice or possibly mashed potatoes - the marinade would make a good gravy too.
