Gingered Beef Stir-Fry

Ingredients:
1 egg white
1 tablespoon cornstarch
1/2 tsp sugar
1/4 tsp ground ginger
1/4 tsp pepper
1 flank steak (1 lb, cut into thin strips)
1 tablespoon vegetable oil
1/2 cup chopped green onions
2 tablespoons light soy sauce
2 medium carrots, thinly sliced
1 medium zucchini, thinly sliced
1/4 lb fresh or frozen snow peas, thawed

Prep time: 20 minutes
Cook time: 20 minutes

Cooking instructions:

In a medium bowl, whisk egg white, cornstarch, sugar, ginger and pepper until smooth. Add beef and toss to coat. In a 10" nonstick skillet, heat oil. Saute onions for one minute. Add beef; stir-fry for 6 to 7 minutes or until meat is browned and tender. Stir in soy sauce. Add carrots, zucchini & peas; stir fry for 4-5 minutes or until vegetables are crisp-tender.

MY ALTERATIONS:

I tripled the meat and sauce. For the vegetables, I used mushrooms, water chestnuts, carrots, and fresh sugar snap peas in the pods. I also added three tiny cloves of grated fresh garlic to the saute and sprinkled a little extra ginger on everything as it was cooking.

Side suggestion: hot cooked rice
